The Hat dance is when your guests pay a gift (usually a dollar) to dance with the bride and groom. The ladies mark up to dance with the groom , and the men line up to dance with the bride.

I don't understand what a hat dance is but there's a song called "Leave Your Hat On" by Joe Cocker (I fantasize). They played it in the movie "The Full Monty" when the guys did the confiscate tease and they were wearing nothing but their hats.
